  • Prep Time: 40 minutes
  • Cook Time: 20 minutes
  • Total Time: 1 hour

Instructions

  • Preheat the oven to 220 degrees Celsius.
  • Puff pastry should be rolled out and cut into circles to fit a muffin tin.
  • Place the pastry circles in the muffin tin, gently pressing down.
  • Heat the milk, cinnamon stick, and lemon peel in a saucepan over medium heat until it reaches boiling point.
  • Whisk together the sugar, egg yolks, and flour in a separate bowl.
  • While whisking constantly, slowly pour the hot milk mixture into the bowl with the sugar, egg yolks, and flour mixture.
  • Return the mixture to the saucepan and whisk constantly over medium heat until it thickens.
  • Stir in the cream after removing the cinnamon stick and lemon peel.
  • Fill the pastry cases 3/4 of the way with the custard mixture.
  • Bake for 15-20 minutes, or until the pastry is golden and the custard has browned slightly on top.
  • Remove from the oven and set aside to cool completely before serving.
