Instructions

  • Preheat the oven to 375°F.
  • Pulse flour, butter, sugar, and salt in a food processor until the mixture resembles coarse meal.
  • Pulse in the egg yolk until the mixture comes together.
  • Add 1 tablespoon of ice water at a time, pulsing after each addition, until the dough comes together.
  • Divide the dough into 6-8 equal parts and press each into a greased tart pan.
  • Bake for 15-20 minutes, or until golden brown, pricking the bottoms of the tarts with a fork.
  • Remove from the oven and set aside to cool completely.
  • In a mixing bowl, combine the cream cheese, sugar, and vanilla extract until smooth.

  • Fill the cooled tart shells with the mixture.
