Mint Mango and Lychee Tart Recipe

Instructions

  • Preheat the oven to 375°F.
  • In a food processor, combine flour, butter, sugar, and salt to make coarse crumbs.
  • Pulse in the egg yolk and ice water until the mixture forms a ball.
  • Fill a 9-inch tart pan halfway with dough.
  • 20-25 minutes, or until golden brown.
  • Combine mint, mango, lychee, sugar, cornstarch, and salt in a medium saucepan.
  • Cook, stirring frequently, over medium heat until the mixture thickens.
  • Pour the mixture into the baked crust.
  • In a large mixing bowl, whip heavy cream, powdered sugar, and vanilla extract to stiff peaks.
  • Spread whipped cream on top of the fruit mixture.
  • Allow at least 2 hours before serving to chill.
