  • Total Time: 40 minutes

Instructions

  • Preheat the oven to 350°F.
  • Combine flour and cocoa powder in a food processor.
  • Pulse in the butter until the mixture resembles coarse meal.
  • Pulse in the sugar, egg yolk, and ice water until the dough comes together.
  • Divide the dough evenly among eight 4-inch tartlet pans, pressing it into the bottoms and up the sides.
  • With a fork, prick the bottoms all over.
  • Bake for 15 minutes, or until the crusts are firm.
  • Allow to cool.
  • Warm the cream in a small saucepan until it is hot but not boiling.
  • Remove from heat and stir in the chocolate, butter, and salt.
  • Allow to stand for 1 minute before whisking until smooth.
  • Fill tartlet shells with chocolate mixture.
  • Chill for 1 hour or until set.
