Instructions
- In a food processor, combine flour, sugar, and salt.
- Pulse in the diced butter until the mixture resembles coarse crumbs.
- 1 tablespoon at a time, add ice water and pulse until the dough comes together.
- Form the dough into a disk, wrap in plastic wrap, and place in the refrigerator for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough to 1/8 inch thickness on a floured surface.
- Cut out circles with a round cutter and press them into a muffin tin.
- Chill for 10 minutes after pricking the bottoms with a fork.
- 12-15 minutes, or until golden brown.
- Combine the mixed berries, sugar, cornstarch, and lemon juice in a saucepan.
- Cook, stirring constantly, over medium heat until the mixture thickens.
- Remove from the heat and set aside to cool slightly.
- Whip heavy cream in a separate bowl until stiff peaks form.
- Top each tartlet with the berry mixture and whipped cream.
