  • Cook Time: 15 minutes
  • Total Time: 1 hour

Instructions

  • In a food processor, combine flour, sugar, and salt.
  • Pulse in the diced butter until the mixture resembles coarse crumbs.
  • 1 tablespoon at a time, add ice water and pulse until the dough comes together.
  • Form the dough into a disk, wrap in plastic wrap, and place in the refrigerator for 30 minutes.
  • Preheat the oven to 375°F (190°C).
  • Roll out the dough to 1/8 inch thickness on a floured surface.
  • Cut out circles with a round cutter and press them into a muffin tin.
  • Chill for 10 minutes after pricking the bottoms with a fork.
  • 12-15 minutes, or until golden brown.
  • Combine the mixed berries, sugar, cornstarch, and lemon juice in a saucepan.
  • Cook, stirring constantly, over medium heat until the mixture thickens.
  • Remove from the heat and set aside to cool slightly.
  • Whip heavy cream in a separate bowl until stiff peaks form.
  • Top each tartlet with the berry mixture and whipped cream.
