Mini Bacon and Egg Frittatas Recipe

These mini frittatas are ideal for breakfast, brunch, or even snacking. They're baked to perfection in a muffin tin with crispy bacon, gooey cheddar cheese, and fresh chives.

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Instructions

  • Preheat the oven to 350°F.
  • Cook the bacon in a large skillet over medium heat until crispy.
  • Remove from pan and pat dry with paper towels.
  • Whisk together the eggs, milk, salt, and pepper in a large mixing bowl until well combined.
  • Combine the cooked bacon, shredded cheddar cheese, and chopped chives in a mixing bowl.
  • Cooking spray should be used to grease a muffin tin.
  • Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
  • Bake for 18-20 minutes, or until the frittatas are set and slightly golden on top, in a preheated oven.
  • Remove from the oven and set aside for a few minutes to cool before serving.
